Well I certainly can’t believe it’s been over a year since I watched and filmed the very first harvest of Prizm. It’s been an exciting journey and I’ve learned so much from Kathy & Philippe. My only problem is I can’t wait to see how the wine will taste one year from now, and ten years from now! Alas, how much more fun will wine be after they’ve invented time machines and we can compare how a wine has aged while each taste is still fresh in our memory. Or is waiting half the fun? Hmmmm… nope!!
We should be able to start shipping out the wine to our pre-ordered customers next week. It’s only been in the bottle three months. Honestly, it’d be best to wait at least three more months, or even nine more months to really get a full expression of the wine. But who am I to tell you what to do? Maybe get a few bottles so you can open one soon, and open one later.
The 2013 Prizm Cabernet is well on its way and is tasting quite fantastic already! The development of flavors coming from the vineyards with our third year of Biodynamic farming is really incredible!
Even though the wine is now in the bottle and our video series documenting its progress has come to a close, I want the fun to continue on this blog. I’ll keep you updated here of any news or press regarding Prizm, and also hope to encourage discussion on the blog about not only Prizm but natural winemaking processes in general.
